Hello! If you’ve read some of my other posts, you might be starting to wonder if I’m a curry-aholic (yes, I know the word doesn’t exist). Let me just say guilty as charged. About ten years ago, my world transformed, when a friend’s wife shared with me her family recipe for curried lentils. I’ve tweaked the recipe over the years, ending up cooking it in a slow cooker. Every time I make a batch of this, any colds we might have seem to disappear. Indeed, my wife and I had an amazing run of no colds whatsoever for about five years when I made this recipe weekly (it’s cheap to make and fills you up). You're reading this blog for one of several reasons:- You can't cook rice no matter how hard you try and you're spending a fortune buying take-out or microwave rice You can cook rice very well, thank you and you want to see if I know what I'm talking about Or You're bored and you can't sleep It doesn't matter. I'm going to share with you my method for how I cook white rice. If you're cooking brown rice, this usually takes 5 to 8 minutes longer. I've been cooking rice for about 40 years and have experienced just about every high and low associated with cooking this staple food. I don't measure either my rice or the water that I cook it in anymore. This recipe makes about 4 good-sized portions of rice (I'm a big chap, so probably 8 portions for any normal human being).  I just cooked an awesome lunch and it was so good, I thought I'd share it with you. I basically just used leftovers to make this scrumptious lunch:- I made Fried Rice in a wok using Leftover rice  Chopped carrot Chopped Onion Half a chicken stock cube Tablespoon of coconut oil Ground black pepper Half teaspoon of Mr Naga Sauce + Tarka Dhal AKA Garlic lentils (I make a batch every week in my slow cooker). I often add finely chopped green chilli and shave creamed coconut into my sauce too and have been known to unconventionally add a splash of soy sauce. + Cooked Meatballs I got the thumbs up from my wife, so it must've been good.
